Curry Tempeh Fritters

Curry Tempeh Fritters
Try these delicious Curry Tempeh Fritters - can be made as burgers as well!! Yum!
Ingredients
- 1 (8 oz) package Tootie's Tempeh
- 2 cloves garlic, peeled and chopped
- 1 fresh red chili seeded and finely chopped or crushed red pepper
- 1 small bunch of fresh cilantro leaves plus more for garnish, roughly chopped
- 2 stalks scallion, finley chopped
- 1 tsp of coconutsugar or maple syrup
- 3 Tbsp flour
- 1/8 cup egg replacement ( we used just egg)
- Pinch of salt and freshly ground black pepper
- Oil for pan frying (we used avocado oil)
Instructions
- Place all the ingredients in a food processor (except for the cooking oil) and process into a coarse mix. It will be like a sticky batter.
- Remove from the food processor into a bowl.
- Form the mix into a ball and then slightly press down to form a disc. Repeat until you are done with the rest of the mix.
- Preheat the oil in a pan.
- Pan fry the tempeh cakes until they are golden brown, turning once. Place on absorbent paper.
- Transfer to a serving platter and garnish with mango chutney, a dollop of vegan yogurt, and the remaining cilantro leaves.
