Curry Tempeh Fritters

Try these delicious Curry Tempeh Fritters - can be made as burgers as well!! Yum!

Ingredients

  • 1 (8 oz) package Tootie's Tempeh
  • 2 cloves garlic, peeled and chopped
  • 1 fresh red chili seeded and finely chopped or crushed red pepper
  • 1 small bunch of fresh cilantro leaves plus more for garnish, roughly chopped
  • 2 stalks scallion, finley chopped
  • 1 tsp of coconutsugar or maple syrup
  • 3 Tbsp flour
  • 1/8 cup egg replacement ( we used just egg)
  • Pinch of salt and freshly ground black pepper
  • Oil for pan frying (we used avocado oil)

Instructions

  1. Place all the ingredients in a food processor (except for the cooking oil) and process into a coarse mix. It will be like a sticky batter.
  2. Remove from the food processor into a bowl.
  3. Form the mix into a ball and then slightly press down to form a disc. Repeat until you are done with the rest of the mix.
  4. Preheat the oil in a pan.
  5. Pan fry the tempeh cakes until they are golden brown, turning once. Place on absorbent paper.
  6. Transfer to a serving platter and garnish with mango chutney, a dollop of vegan yogurt, and the remaining cilantro leaves.
