Frozen Banana, Peanut Butter, Chocolate & Tempeh Treat

Frozen Banana, Peanut Butter, Chocolate & Tempeh Treat

Katrina, our intern, has been playing with the tempeh and came up with a crowd-pleasing summer dessert!

Ingredients

  • 2 bananas
  • 4 tbsp peanut butter
  • 4 tbsp of dark chocolate
For Cumble Topping
  • ½ package (4 oz) Tootie’s tempeh, crumbled
  • 1 Tbsp olive oil
  • 1 Tbsp maple syrup
  • ½ tsp of cinnamon
  • ¼ tsp nutmeg
  • 1 Tbsp brown sugar or agave
  • 1 Tbsp Oatmeal

Instructions

  1. Crumble tempeh into pea-sized bits into a bowl.
  2. Heat a saucepan over medium heat with olive oil and saute tempeh with maple syrup, cinnamon, oatmeal, nutmeg and brown sugar. Allow for tempeh to brown and then set off to the side to cool.
  3. Cut bananas in half and then through the middle to have four slices of banana halves. Place halves on a baking sheet with parchment paper.
  4. Put 1 tbsp of peanut butter on each of the banana halves and place in the fridge to allow the peanut butter to harden.
  5. Heat dark chocolate over heat (or microwave) until melted.
  6. Take bananas out of the fridge, drizzle on the chocolate, and top with the tempeh crumble while the chocolate is still warm.
  7. Place bananas in the freezer for an hour and a half or more.
  8. Enjoy!
