Curry tempeh salad
Here is an easy and tasty #tempehtuesday recipe by Matt for curry tempeh salad. This has been a big hit at our recent samplings.
Ingredients
- (2) 8oz packages of Curry Seasoned Tootie’s Tempeh
- 1 teaspoon salt
- 1 teaspoon onion powder
- 2 tablespoons lemon juice
- 1 tablespoon apple cider vinegar
- 2 teaspoons dijon mustard
- 4 oz mayonnaise
- 2 tablespoons minced pickled onions
Instructions
- Steam the tempeh - break the tempeh into smaller pieces into a steamer basket within a pot filled with a cup of water. Cover and steam for 15 minutes.
- With tongs take the tempeh out and reserve in a large mixing bowl - let cool
- With your hands crumble the tempeh
- Add the other ingredients and incorporate thoroughly mixing with your hands or a spoon
- Serve in a sandwich or as an appetizer - grapes or mango chutney compliment the flavors well
