Tempeh avocado Brownies

Tempeh Avocado Brownies
These amazingly delicious tempeh brownies are a healthier dessert option!
Ingredients
- 1 (8 oz) package Tootie's Tempeh, crumbled
- 2 small avocados (or one large)
- 3 cups gluten-free or regular flour
- 1/4 tsp salt
- 1/2 Tbsp baking soda
- 1 Tbsp baking powder
- Egg replacer equal to 2 eggs (I used flax meal in hot water)
- 2 tsp vanilla
- 1 cup unsweetened cocoa powder (or 2 cups unsweetened chocolate chips)
- 1 cup coconut sugar or equivalent
- 1 cup soy milk (or your choice of plant or nut milk)
- Dark chocolate for shavings (optional)
Instructions
- Preheat oven to 350℉.
- Sift together all the dry ingredients.
- In a small bowl, mix together the avocado, tempeh, vanilla and all the other wet ingredients (except the milk) using a fork.
- Combine the wet mixture into the bowl with the dry ingredients. Stir in the soy milk. If it's too dry add a bit of olive oil or more milk.
- Grease a baking dish. Pour the brownie batter into the pan and spread evenly. Bake 25-30 minutes or until done.
- Once the brownies have cooled, use a knife to shave the chocolate over the brownies (about 1-2 Tbsp, optional). Top with vegan whipped cream or ice cream. So tasty!
